I really enjoy the creativity behind the food and the flavors they develop.
My favorite part of this dish was the fried cheese on top. It was very fun to eat and it was a good buffer for the pork.
I’m normally not crazy about cabbage slaws, but I liked how it provided an extra layer of texture and crunch.
The pickled onions were a great touch to add some acidity to make everything work. It was surprisingly delicate considering all the rich ingredients, which made it easy to eat.
The fried arepitas were a bit buried, causing them to get a little soggy, but they were a nice vessel.
