I enjoyed a fresh oyster in my meat eating days, but I never did love them cooked. They were very easy to mess up, unless they were battered thick and fried New Orleans style.
With that being said, this vegan interpretation was better than any other #oystersrockefeller I’ve had in the past.
I really enjoyed the delivery. It activated the muscle memory of eating an actual oyster. The idea of using an artichoke petal is great.
The oyster mushroom was an obvious great substitution and apart from delicious, also way more sustainable and humane.
It had a good parmesan crust, but my absolute favorite part was the combination of the remoulade and the seaweed caviar.
OUTSTANDING!!!
1 suggestion: maybe use the petals that have some artichoke meat on them, so when you eat the “oyster” you can scrape that artichoke flesh with your teeth and add another layer. The petal would be more than just a vessel.
