Pot pies have always been the meaning of American comfort to me.
I’m a big fan and I hadn’t had one in quite some time… mainly, because they’re normally chicken pot pies and it’s already been a year since I gave up eating animals.
The idea of making a vegetable curry is witty, fun and very flavorful.
I loved the mix of cultures as well. Americana meets Thai and the offspring made me a believer!
This chef is way more than just baked goods. This dish was a show of mastery in technique and an understanding of complex flavors, while honoring the identity of the original dish.
