The answer to the question is no. There isn’t gluten in soy beans, as titled at the restaurant.
They are definitely lost in translation… It’s fried wheat gluten!
I know that for most of the word #gluten is the invocation of satan, but it actually isn’t. Apart from people with actual intolerances or allergies, If the wheat it comes from isn’t GMO, the stuff is pretty good. It’s in pizza crust, pasta, bread… pretty much anything made with wheat.
FYI: humans have been surviving and thriving with wheat for millennia!
The genetically modified stuff is the one you should be afraid of.
I rest my case and direct my attention to the dish itself.
It looks funky as hell, but it is DELICIOUS! I would eat bowls of it and not get tired.
It’s UMAMI in a bowl.
I have not stopped thinking about this place due to this dish. I’m planning on coming back to try some other funky menu items and more of this.
