Flan is a wobbly subject. Everyone likes it in a different way and can either love it or hate unless it checks all the boxes for them.
For those unfamiliar with flan, it’s just a baked custard, but it comes in many varieties ranging in flavor, size and cooking technique.
On a personal side, I like mine firm and creamy… I can’t stand a wobbly, eggy flan full of air bubbles. That’s a NO-GO for me. This particular flan has the right consistency for me and I love the addition of the coconut flavor. The best part is how it is masterfully paired with passion fruit sorbet. It works to provide balance between acidity and richness. It also works as a palate cleanser.
It’s made with coconut essence, so I can feel a slight bitter after taste from it, but that’s me being the A Hole that I am. If they have it on the menu, it’s an absolute must!
