One of the things that I admire the most of this chef and his food, is the ability he has to refine and clean flavors from traditional dishes.
Tradition is essential in many aspects in food, but it doesn’t mean you can’t change things around, especially if it’s for improvement.
Doing the same old thing, the same old way, everyday is the definition of INSANITY.
So to those, who feel things need to be done the one way, the old way and the only way… this might not be the FRITA for you.
For me, it’s definitely a FRITA and an improved one for that matter!
