I would come back to eat this salad over and over… Grilled Eggplant, Cucumber, Almond & Ricotta.
If you mention the word “Salad” this is what directly comes into my mind, in a very positive way right now. If they made salads like this everywhere, I would increase my vegetable intake by 1000%. Apart from being beautifully constructed, the assembly has experimental purpose. Eggplant is the star, but the supporting actors play an essential role.
I loved the crunch from the almonds and the creamy-freshness provided by the ricotta dressing. The biquinho peppers provided a sweet heat that just worked my salivary glands along with the subtle bitterness from the greens. It was almost like an unconscious eggplant scavenger hunt that was rewarding even when the meaty cubes weren’t in each bite.
