We live in a society that shames dishes like this, because people are appalled by seeing the faces of the animals they eat on a daily basis.
If seeing the face of the animal bothers you, maybe you shouldn’t be eating animals at all.
I’m not choosing any sides or defending anyone… I’m just pointing something out. That’s all!
Going back to the dish itself, I loved the bed of escabeche the fish was served over.
It was a smart pairing with a fried fish. It was very harmonious. If you followed every bite of the fish with #escabeche it would prepare you for the next, without ever being overwhelmed.
The fish itself was over cooked, but it’s a lot harder that you think to fry fish whole.
You need to master the temperature of the oil, and preferably cook it twice in different temperatures, to insure the perfect temperature inside and a crispy skin.
I feel this restaurant should have nailed it and they didn’t.
I regard this restaurant as one of my favorites for Progressive Mexican Cuisine, but this latest experience revealed its weaknesses.
We pretty much ordered the entire menu, and there was only one dish that was flawless.
