I’m a sucker for a good interpretation of a classic. Although, Mexican in its beginnings, it’s an Italian American staple served in pretty much every restaurant. THIS ONE isn’t your everyday Caesar salad.
The semolina crouton ring as the main focus as it ringed around the greens holding them together and providing texture. It was dressed with preserved lemons, confit garlic and sprinkled with cured duck egg and Pecorino Romano. This topping was so seductive, it almost looked like fairy dust…
It was brilliant how it imposed on the eye and not on the palate. It was flavorful enough to satisfy and subtle enough to get your appetite going.
