Emojis was the word used to describe this dish, due to its appearance. The name stuck in my mind and the flavor of the centerpiece bite of tofu with sweet potato kimchi stuck in my heart!
I had several amazing bites in this vegetarian #omakase but this one was the most memorable. It was quite brilliant to use the torched blank canvas of a silky tofu square to highlight the kimchi masterpiece.
This was their last vegetarian tasting for the season… I want to first, thank the crew and management for putting this together for vegetarians and beg for you to find a way to keep on doing it! US VEGETARIANS, also like to eat well, and experience amazing food!
And from the mind of a chef, I say this unbiased to every proud chef out there, if you want to show talent, cooking chops and real ingenuity do it without animal protein.
I say this only, to those who really want to challenge themselves like these guys!
