This is Colombian fast food, if you’ve never tried it, it’s very popular all over Colombia, but it was originated in my home town, BARRANQUILLA.
Nowadays every city or region has its own versions, which is cool; good dishes have to adapt based on availability of products and demographics.
If you want to try the closest thing to the OG in Orlando, this is the spot.
What you see here, is French fries loaded with fried sausage, chorizo, steak, chicken, bacon, corn off the cob and the signature sauces, which I feel are the biggest determining factor of good Colombian fast food.
I specially admire the fact that he is making his own sauces including #bollolimpio and #salsapiña
Bollo limpio is like a corn cake in the form of a tamal that is used as a side dish or a snack when accompanied with cheese and the pineapple sauce is definitely an insignia.
I like that the owner takes the food and the theme so seriously.
